Help! I’m not sure what I did or didn’t do correctly. When I mixed the wet and dry ingredients, the mixture stuck to my hands like taffy . I had such a trying time rolling dough into balls . I read another comment which said to chill dough overnight. Is that the case?
I love ginger molasses cookies and I’d like to make them for the holidays . Can you help me ?

I followed the recipe exactly except I used a GF flour mix. I refrigerated the dough overnight before baking. The texture and bake are perfect, but both my partner and I agreed there is a bit too much baking soda in the recipe. We can taste the aftertaste in the final product. It’s not enough to effect the bake (rise fast and collapse), but you can taste it. When I looked at the recipe, I thought 1.5 tsps was a lot for a batch of dough this size. But I decided to proceed as written.

I could never forget about your blog. I find that I need to add another quarter cup of butter in order to make these stick together when I roll them. You know, coconut flour, which requires far more liquid in order to play nice in recipes than most other flours.
