I added chickpeas & the roasted veggies to a bed of kale, roasted pumpkin seeds & instead of adding water to the dressing I added aquafaba, mustard & 3 times the garlic 😂. I made this along with some tofu for my housemates and it went over well. We all loved the dressing! I didn’t have parsley or pine nuts, but followed the recipe other than that and used carrots and potatoes. Thanks for the great dressing recipe! I’ll definitely be making this again.
