That doesn’t seem to match the texture described in step 4. Also, I don’t keep flavored whey protein powder on hand. Have you tried this with plain? How would you recommend matching the sweetness intended in this recipe without the sweeteners used in flavored whey powder?

Thank you! Great for a pre or post workout snack or for those mid afternoon slumps where you crave something sweet. Easy to adapt to personal taste. I’ve made it close to as written twice with the addition of pumpkin and sunflower seeds as I don’t like dried fruit. Today I made them with Chocolate Protein powder instead, added a pinch of salt and used 2 tablespoons of maple syrup instead of honey as I was out of the latter. The chocolate peanut butter flavour is amazing and a little too addictive. I always add more chia seeds, up to 4 tablespoons, and 2 teaspoons of psyllium powder for more fibre and adjust how much almond milk I add accordingly to make sure the batter ‘binds’ well.

I tweaked a thing or two, but still delicious. I used unflavoured protein powder ’cause it’s what I had, pumpkin pie spice instead of just cinnamon, and my add-ons were chopped almonds. Oh, and I used unsweetened vanilla almond milk. I just made a full 24 of them, and they’re chilling as we speak. In fact, it’s just about time for me to put them in a container for storing.

Next time I might use a little maple syrup for some of the honey, just because I love the flavour.
